Muschelfleisch ausl\u00f6sen und bei Seite stellen.<\/p>\n<p>Suppe:<\/p>\n<p>Schalotte und Fenchel p\u00fcrieren und mit Butter anschwitzen. Das ganze mit Wehrmut abschl\u00f6schen.Danach Fischfond und Sahne zugeben und 20 min k\u00f6cheln lassen. Alles durch ein Sieb geben. Safran hinzugeben sowie Salz, Pfeffer und Zucker. Einmal aufkochen.<\/p>\n<p>R\u00fcbe:<\/p>\n<p>Mair\u00fcben in London Dry Gin 40 min kochen,<\/p>\n<p>erkalten lassen und in Streifen schneiden. Abtrocknen und danach Oberfl\u00e4che mit Bunsenbrenner abfl\u00e4mmen.<\/p>\n<p>Fisch:<\/p>\n<p>Kabeljau abtrocknen und in hei\u00dfer Butter nur auf der Hautseite braten.<\/p>\n<p>Garnitur:<\/p>\n<p>Fenchelgr\u00fcn, Zitronenschale und Dill fein hacken und vermischen. ( jeweils gleiche Anteile)<\/p>\n<p>Anrichten:<\/p>\n<p>Auf den vorgew\u00e4rmten Teller die kalten R\u00fcbenstreiefen legen und mit der nochmal aufgekochten Suppe angie\u00dfen.
